Boost Brunch with Yummy Paleo Quiche

I'm enjoying coffee on a Sunday morning, waiting for football to start. Brunch is sounding like a good plan. One of my favorite brunch items is quiche. This recipe uses sweet potato and coconut milk, which seems odd, but really works to make the end product creamy and delicious.
